Pasta Preparation

Cook the Fettuccine
In a large pot, bring water to a boil. Add 1 tablespoon of salt once boiling.

Add Pasta
Add the fettuccine to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain Pasta
Once cooked, reserve about 1/2 cup of the pasta water, then drain the fettuccine and set aside.
Truffle Mushroom Sauce Preparation

Sauté Shallots and Garlic
In a large skillet over medium heat, add 2 tablespoons of olive oil and 50 grams of butter. Once melted, add the finely chopped shallots and minced garlic. Sauté for about 2-3 minutes until they are translucent and fragrant.

Add Cream and Seasonings
Reduce the heat to low and pour in 200 ml of heavy cream. Stir in 2 tablespoons of truffle oil, 1 teaspoon of salt, and 1 teaspoon of freshly ground black pepper. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.

Combine Pasta and Sauce
Add the drained fettuccine to the skillet with the sauce. Toss to combine, and if the sauce is too thick, gradually add the reserved pasta water until desired consistency is reached.

Finish with Cheese
Stir in 50 grams of grated Parmesan cheese until melted and well incorporated into the sauce.
Serving

Plate the Dish
Divide the fettuccine tartufo among plates or bowls. Garnish with chopped fresh parsley and additional grated Parmesan if desired.

Serve immediately while hot, allowing everyone to enjoy the rich flavors of the truffle mushroom sauce.
