Pasta Preparation

    Cook the pasta

    In a large pot, bring salted water to a boil. Add 12 oz of farfalle pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

    Prepare the sauce

    In a large skillet, heat 1 tbs of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.

    Add champagne

    Pour in 1 cup of champagne and let it simmer for about 2-3 minutes to reduce slightly.

    Incorporate cream

    Reduce the heat to low and stir in 1 cup of heavy cream. Let the sauce simmer for an additional 3-4 minutes, stirring frequently.

    Add smoked salmon

    Chop the 8 oz of fresh smoked salmon into bite-sized pieces and gently fold it into the sauce. Allow it to warm through, about 2 minutes.

    Season the sauce

    Add 2 tbs of finely chopped chives, and season with salt and black pepper to taste. Mix well.

Combine and Serve

    Combine pasta and sauce

    Add the cooked farfalle pasta to the skillet with the sauce. Toss gently to coat the pasta evenly with the sauce.

    Serve immediately, garnished with additional chives if desired.
