Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients

In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Dredge the Calamari

Dip the calamari rings into the buttermilk, allowing the excess to drip off. Then dredge them in the flour mixture until well coated.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari

Carefully add the calamari in batches to the hot oil and fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Serve the fried calamari hot with lemon wedges on the side.

Kale-Cranberries Goat Cheese Salad

Prepare the Salad Base

In a large bowl, add the chopped kale. Massage the kale with your hands for a few minutes to soften it.

Add the dried cranberries, crumbled goat cheese, and toasted walnuts to the kale.

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
