Tomato Sauce Preparation

Add Tomatoes
Pour in the 28 oz can of whole tomatoes (including juice), breaking them up with a spoon. Add 1 teaspoon each of salt, black pepper, and sugar, as well as 1 teaspoon of dried oregano.

Simmer
Bring the sauce to a simmer and reduce heat to low. Let it cook for about 20-25 minutes, stirring occasionally until it thickens.

Mix Dry Ingredients
In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon of instant yeast, 1 teaspoon of sugar, and 1 teaspoon of salt.

Add Water and Oil
Add 3 tablespoons of warm water and 1 tablespoon of olive oil to the dry ingredients. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let it Rise
Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Assembling the Pizza

Preheat Oven
Preheat your oven to 475°F (245°C).

Shape the Dough
Once risen, punch down the dough and transfer it to a floured surface. Roll it out to your desired thickness and shape.

Add Sauce and Toppings
Spread the prepared tomato sauce over the dough, leaving a small border. Sprinkle with 2 cups of shredded mozzarella cheese and arrange 6 oz of sliced spicy sopressata on top.

Bake the Pizza
Transfer the pizza to a baking sheet or pizza stone and bake in the preheated oven for 12-15 minutes, or until the crust is golden and cheese is bubbling.

Finish with Hot Oil
Once out of the oven, drizzle 2 tablespoons of hot olive oil over the pizza before slicing.
