Clean and Prepare the Seafood
Rinse the calamari, octopus, and shrimp under cold water. Pat dry with paper towels. Cut the calamari into rings, and if the octopus is not pre-cooked, boil it in salted water for about 30 minutes until tender. Peel and devein the shrimp.

Sauté the Seafood
Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the calamari and octopus and sauté for about 5 minutes until they start to become opaque. Add the shrimp and cook for another 3-4 minutes until they turn pink and opaque.

Add Celery
Add the chopped celery to the skillet and cook for an additional 2-3 minutes until the celery is tender but still crisp.

Dress the Dish
Remove the skillet from heat. Drizzle with remaining 2 tablespoons of extra virgin olive oil and 3 tablespoons of white wine vinegar. Toss everything together gently to coat.
