Prepare the Brussel Sprouts
Preheat your oven to 400°F (200°C). Wash the brussel sprouts under cold water, then trim the ends and remove any yellow or damaged leaves.

Cut and Season
Cut each brussel sprout in half lengthwise. Place them in a large bowl, drizzle with olive oil, sprinkle with salt and black pepper. Toss until they are well coated.

Roast the Brussel Sprouts
Spread the brussel sprouts in a single layer on a baking sheet, cut side down. Roast in the preheated oven for about 20-25 minutes, or until they are crispy and golden brown.

Add Pecorino Cheese
Remove the baking sheet from the oven and immediately sprinkle the grated pecorino cheese over the hot brussel sprouts. Return to the oven for an additional 5 minutes to melt the cheese.

Serve
Once the cheese is melted and slightly browned, remove from the oven. Let cool for a minute, then transfer to a serving dish. Serve warm and enjoy your crispy brussel sprouts!
