Method

Preparation

  1. 1

    Clean the clams

Soak the clams in a bowl of cold water for about 30 minutes to remove any sand. Scrub the shells under running water and rinse well. Discard any clams that are open and do not close when tapped.

  2. 2

    Prepare the tomatoes

Chop the tomatoes into small pieces and set aside.

  3. 3

    Mince the garlic

Peel and mince the garlic cloves finely.

  4. 4

    Toast the bread

Toast the slices of bread until golden brown. You can use a toaster or a grill.

Cooking

  1. 5

    Sauté the garlic

In a large pot or skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  2. 6

    Add the tomatoes

Add the chopped tomatoes to the pot and stir to combine. Cook for about 5 minutes until the tomatoes start to soften.

  3. 7

    Add the clams and wine

Pour in the white wine and add the cleaned clams. Season with salt and black pepper. Cover the pot and cook for about 5-7 minutes until the clams open up.

  4. 8

    Finish and garnish

Once the clams have opened, remove the pot from heat. Stir in the chopped parsley and adjust seasoning if needed.

Serving

  1. 9

    Plate the dish

Serve the clams in a bowl with the broth and top with the toasted bread. You can also serve the toasted bread on the side for dipping.
