Preparation
- 1
Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and black pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from grill and let it rest for 5 minutes before slicing it into bite-sized pieces.
- 2
Prepare the Vegetables
While the chicken is grilling, wash and prepare the vegetables. Chop the romaine lettuce into bite-sized pieces, dice the tomatoes, and slice the cucumber thinly. If using fresh corn, you can grill it along with the chicken or use canned corn (drained).
- 3
Slice the Avocado
Cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces or cubes as preferred.
Mixing the Salad
- 4
Combine Ingredients
In a large salad bowl, combine the grilled chicken pieces, chopped romaine lettuce, diced tomatoes, sliced cucumber, corn, and avocado.
Dressing
- 5
Prepare the Dressing
In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper until well combined.
- 6
