Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

    Melt Chocolate and Butter

    In a double boiler, melt the bittersweet chocolate and unsalted butter until smooth. Stir occasionally to combine. Remove from heat and let cool slightly.

    Mix Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, large eggs, and the large egg yolk until the mixture is thick and pale.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine.

    Add Dry Ingredients

    Sift the all-purpose flour and salt into the mixture, then add the vanilla extract. Gently fold until just combined.

Baking

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

    Remove from the oven and let the cakes cool in the ramekins for about 1-2 minutes.

    Carefully invert each ramekin onto a plate. Serve warm with a scoop of vanilla ice cream on the side.
