Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Dredge in Buttermilk
In a separate bowl, whisk together the egg and buttermilk. Dip each calamari ring into the buttermilk mixture, allowing excess to drip off, then dredge in the flour mixture until fully coated.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.

Toss in Buffalo Sauce
In a large bowl, combine the fried calamari with the buffalo sauce. Toss until evenly coated.

Make the Dipping Sauce
In a mixing bowl, combine the blue cheese, sour cream, mayonnaise, lemon juice, and garlic powder. Mix until smooth and well combined.

Add salt and black pepper to the dipping sauce to taste. Adjust according to your preference.

Serve the buffalo calamari rings hot with the blue cheese dipping sauce on the side.
