    Prepare the Vegetables

    Dice the onion and bell peppers. Chop the spinach and set all aside.

    Whisk the Eggs

    In a large bowl, crack the eggs and whisk them together with the milk, salt, and black pepper until well combined.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, and sauté for about 5 minutes until they are softened. Stir in the chopped spinach and cook for an additional 2 minutes until wilted.

    Combine and Cook

    Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle the cheddar cheese evenly on top. Cook over medium heat until the edges start to set, about 5 minutes. Then, using a spatula, gently lift the edges and allow the uncooked egg to flow underneath.

    Finish Cooking

    Once the eggs are mostly set (about 10-12 minutes), you can cover the skillet with a lid to help the top set. Cook for an additional 5 minutes or until the eggs are fully cooked through.

Serving

    Plate the Dish

    Once cooked, carefully slide the frittata onto a cutting board. Let it rest for a few minutes before slicing into wedges.

    Add Optional Toppings

    Serve the frittata warm with sliced avocado, a dollop of sour cream, and a sprinkle of fresh herbs on top if desired.
