Chicken Cutlet

    Prepare Chicken

    Pound the chicken breasts to an even thickness using a meat mallet. This ensures even cooking.

    Set Up Breading Station

    In three separate bowls, place flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

    Bread the Chicken

    Dredge each chicken breast in flour, shaking off excess, then dip into the beaten eggs, and finally coat with breadcrumbs. Press breadcrumbs to adhere.

    Cook Chicken

    In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken cutlets and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and keep warm.

Provolone

    Add Cheese

    During the last minute of cooking the chicken, place a slice of provolone cheese on top of each cutlet and cover the skillet for 1 minute to melt the cheese.

Broccoli Rabe

    Prepare Broccoli Rabe

    Trim the ends of the broccoli rabe and wash thoroughly. Bring a pot of salted water to a boil.

    Blanch Broccoli Rabe

    Add the broccoli rabe to the boiling water and cook for 2-3 minutes until bright green and tender. Drain and plunge into ice water to stop cooking.

    Sauté Broccoli Rabe

    In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.

    Combine and Season

    Add the blanched broccoli rabe to the skillet and sauté for an additional 3-4 minutes. Season with salt and black pepper.
