Prepare the Sauce

    Sauté the Garlic

    In a medium saucepan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomato Sauce

    Pour in the tomato sauce and stir to combine. Bring to a simmer.

    Season the Sauce

    Add salt, black pepper, and dried oregano to the sauce. Stir well and let it simmer for 15 minutes, stirring occasionally.

Cook the Toppings

    Cook the Sausage

    In a skillet over medium heat, add the Italian sausage. Cook until browned and fully cooked, breaking it apart with a spatula, about 7-10 minutes.

    Sauté the Mushrooms

    Add the sliced Portobello mushrooms to the skillet with the sausage. Cook until the mushrooms are tender and browned, about 5 minutes.

Assemble the Boscaiola

    Preheat the Oven

    Preheat your oven to 220°C (428°F).

    Combine Ingredients

    In a baking dish, spread a layer of the tomato sauce. Top it with the cooked sausage and mushrooms, followed by a generous layer of shredded mozzarella.

    Bake

    Place the dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Serve

    Add Arugula

    Once out of the oven, top the dish with fresh arugula. Allow to cool slightly before serving.
