Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast over the top and let sit for about 5-10 minutes until it becomes frothy.

    Mix the Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt.

    Make a well in the center of the flour mixture. Pour in the activated yeast mixture and the olive oil. Stir until a sticky dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Topping Preparation

    Prepare Toppings

    While the dough is rising, wash and halve the cherry tomatoes. Chop the rosemary and set aside. If using black olives, pit and slice them. Caramelize the onions in a skillet over medium heat until they are soft and golden.

Assembly and Baking

    Preheat Oven and Prepare Baking Sheet

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly.

    Shape the Dough

    After the dough has risen, punch it down and turn it out onto a floured surface. Stretch and shape it into a rectangle or circle, about 1 inch thick.

    Create Dents and Add Toppings

    Transfer the shaped dough to the prepared baking sheet. Use your fingers to create dimples all over the surface of the dough. Evenly distribute the cherry tomatoes, black olives, and caramelized onions on top. Sprinkle with chopped rosemary and sea salt.

    Cover the dough again and let it rise for an additional 20-30 minutes.
