Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Wings
In a large bowl, combine paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Toss the chicken wings in olive oil, then coat them with the dry rub mixture until evenly coated.

Bake the Wings
Place the seasoned wings on a baking sheet lined with parchment paper. Bake in the preheated oven for 30 minutes, turning halfway through.

Fry the Wings
After baking, heat oil in a fryer or deep pot to 375°F (190°C). Fry the wings in batches for about 5 minutes until crispy.

Toss in Sauce
In a large bowl, toss the fried wings with your choice of sauce until evenly coated.

Serve the wings hot with blue cheese dressing and celery sticks on the side.
