Mahi Fish Tacos

Method

Fish Preparation

    Season the Mahi Mahi

    In a bowl, combine olive oil, cumin, paprika, garlic powder, salt, and black pepper. Rub this mixture over the Mahi Mahi fillets.

    Cook the Fish

    Heat a grill or skillet over medium-high heat. Cook the seasoned Mahi Mahi for about 4-5 minutes on each side or until cooked through. Remove from heat and flake into large pieces.

Slaw Preparation

    Mix the Slaw

    In a bowl, combine shredded cabbage, chopped jalapeno, shredded carrot, chopped cilantro, lime juice, and salt. Toss to combine and let it sit for at least 10 minutes.

Salsa Preparation

    Prepare the Mango Salsa

    In a bowl, mix diced mango, chopped red onion, diced red bell pepper, lime juice, chopped cilantro, and salt. Set aside.

Chipotle Sauce Preparation

    Make the Chipotle Sauce

    In a bowl, whisk together ancho chili powder, minced chipotle, sour cream, and lime juice until smooth.

Assembly

    Assemble the Tacos

    Warm the corn tortillas. Layer flaked Mahi Mahi, jalapeno slaw, mango salsa, and drizzle with ancho chipotle sauce. Serve with optional Mexican street corn on the side.
