Prepare the crust
In a large bowl, mix flour, sugar, and salt. Add diced butter and mix until crumbly. Gradually add ice water until the dough forms. Divide and chill for 30 minutes.

Make the filling
In a large bowl, combine sliced apples, cinnamon apple cider, sugar, lemon juice, ground cinnamon, and cornstarch. Toss until evenly coated.

Roll out the crust
Preheat oven to 425°F (220°C). Roll out one piece of chilled dough and fit it into a pie dish. Fill with apple mixture.

Prepare topping
In a bowl, combine rolled oats, brown sugar, flour, cinnamon, and melted butter. Mix until crumbly and sprinkle over the apple filling.

Cover the pie with the second rolled-out dough piece or leave it open-faced. Bake for 45-50 minutes or until golden brown and bubbly.
