    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Sauté the Vegetables

    In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown, about 5 minutes. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and black pepper. Remove from heat.

    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, grated gruyere cheese, and a pinch of salt and pepper.

    Combine and Cook

    Pour the egg mixture over the sautéed vegetables in the skillet. Stir gently to combine and ensure the vegetables are evenly distributed. Cook on the stovetop for about 3-4 minutes until the edges begin to set.

    Bake the Frittata

    Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is set in the center and lightly browned on top.

    Prepare Balsamic Reduction

    While the frittata is baking, combine balsamic vinegar and remaining tablespoon of olive oil in a small bowl. Whisk to combine.

    Once baked, remove the frittata from the oven. Let it cool for a few minutes before slicing. Drizzle the balsamic reduction on top before serving.
