Method
Making the Pretzel Dough

Activate Yeast
In a bowl, combine warm water, active dry yeast, and granulated sugar. Let sit for about 5 minutes until frothy.

Mix Dough
In a large mixing bowl, combine the yeast mixture with flour and salt. Stir until a dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Rise
Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.
Shaping and Baking

Shape Pretzels
Preheat oven to 425°F (220°C). Once risen, punch down the dough and divide it into smaller pieces. Roll each piece into a rope and twist into the pretzel shape.

Prepare Baking Soda Bath
In a large pot, bring 4 cups of water to a boil and add baking soda. Drop each pretzel into the boiling water for about 30 seconds, then remove and place on a parchment-lined baking sheet.

Add Topping and Bake
Mix granulated sugar and ground cinnamon. Sprinkle on top of each pretzel. Bake for 12-15 minutes or until golden brown.

While pretzels are baking, warm caramel and chocolate sauces in separate bowls.

Once pretzels are baked, serve them warm with caramel and chocolate sauces on the side for dipping.
