    Prepare the Chicken

    Marinate the chicken thighs in buttermilk for at least 1 hour or overnight in the refrigerator.

    Fry the Chicken

    Preheat oil in a deep skillet over medium-high heat. Dredge the marinated chicken in flour, shaking off excess. Fry chicken for about 7-8 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

    Make the Gravy

    In the same skillet, remove excess oil, leaving about 2 tablespoons. Add chopped Andouille sausage and sauté until browned. Stir in remaining flour and cook for 1 minute. Gradually add chicken broth, whisking to avoid lumps. Simmer until thickened, about 5-7 minutes.

    Sauté the Spinach

    In a separate pan, sauté fresh spinach in a little olive oil until wilted. Season with salt and pepper.

    Assemble the Dish

    Place a fried chicken thigh on a plate, top with Andouille sausage gravy, and serve with sautéed spinach on the side. Drizzle ARS hot honey over the top before serving.
