Method

Cake Preparation

    Preheat and Prepare

    Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, and salt.

    Combine Wet Ingredients

    In another bowl, mix the oil, eggs, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet mixture to the dry ingredients, mixing until just combined.

    Add Carrots and Other Add-ins

    Fold in the grated carrots, crushed pineapple, raisins, and walnuts until evenly distributed.

    Bake the Cake

    Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Icing and Ganache Preparation

    In a large bowl, beat the softened cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.

    In a small saucepan, heat the heavy cream until just boiling. Remove from heat and stir in the white chocolate chips until melted and smooth.

Assembly

    Place one layer of cake on a serving plate. Spread a layer of cream cheese icing on top. Repeat with the second layer and top with the third layer.

    Use the remaining cream cheese icing to frost the top and sides of the cake. Drizzle the white chocolate ganache over the top for decoration.
