Prepare the Spaghetti
Cook the spaghetti according to the package instructions in salted boiling water until al dente. Drain and set aside.

Prepare the Veal Cutlets
Season the veal cutlets with salt and black pepper.

Bread the Cutlets
Dredge each cutlet in flour, dip in beaten eggs, and then coat with bread crumbs.

Fry the Cutlets
In a large skillet, heat olive oil over medium-high heat. Cook the breaded cutlets for about 4-5 minutes on each side or until golden brown and cooked through. Remove and set aside.

Assemble the Dish
In the same skillet, add the fresh spinach and sauté until wilted. Place the cooked cutlets back in the skillet, top each with pomodoro sauce and mozzarella cheese. Sprinkle grated Parmesan cheese on top.

Bake
Transfer the skillet to a preheated oven at 375°F (190°C) for about 10-15 minutes until the cheese is bubbly and golden.

Serve the veal parmigiana hot, alongside the spaghetti and additional pomodoro sauce if desired.
