Gelato Preparation

    Make the Base

    In a medium saucepan, combine the whole milk, heavy cream, and half of the sugar. Heat over medium heat until just simmering.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks and remaining sugar until pale and fluffy.

    Temper the Eggs

    Slowly pour the hot milk mixture into the egg yolks while whisking constantly to avoid curdling.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon (about 10-15 minutes).

    Add Flavorings

    Remove from heat and stir in vanilla extract. For chocolate gelato, add cocoa powder. For lemon sorbetto, add lemon juice and zest.

    Chill the Mixture

    Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

    Churn the Gelato

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
