Prepare the Dough
In a large bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy. Stir in olive oil, salt, and flour until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let rise in a warm place for 1 hour.

Caramelize the Onions
In a skillet, heat a tablespoon of olive oil over medium heat. Add sliced onions, and cook until they are soft and caramelized, about 15-20 minutes. Stir in balsamic vinegar and cook for another 2 minutes. Remove from heat.

Assemble the Flatbread
Preheat your oven to 475°F (245°C). Roll out the dough on a floured surface to your desired thickness. Transfer to a baking sheet. Spread pesto over the dough, then layer caramelized onions, roasted peppers, and slices of fresh mozzarella.

Bake the Flatbread
Bake in the preheated oven for 12-15 minutes or until the edges are golden and the cheese is bubbly.

Remove the flatbread from the oven and top with fresh basil leaves. Slice and serve warm.
