Prepare the Pasta
Preheat your oven to 350°F (175°C). In a large pot of boiling salted water, cook the macaroni according to package instructions until al dente. Drain and set aside.

Cook the Pancetta
In a skillet over medium heat, cook the pancetta until crispy, about 5-7 minutes. Remove from heat and set aside.

Make the Cheese Sauce
In the same pot used for the pasta, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk, stirring constantly until the sauce thickens, about 5-7 minutes. Add the cheddar cheese, salt, black pepper, and garlic powder, stirring until the cheese is melted and smooth.

Combine Ingredients
Add the cooked macaroni and pancetta to the cheese sauce, stirring to combine evenly.

Prepare for Baking
Transfer the macaroni and cheese mixture to a greased 9x13 inch baking dish. Sprinkle the bread crumbs evenly over the top.

Bake
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
