Method
Cocktail
- 1
Build and shake
Add gin, passion fruit puree, vanilla syrup, fresh lime juice, and ice to a cocktail shaker. Shake vigorously for 10–12 seconds until the outside of the shaker feels cold.
- 2
Strain into glass
Double-strain the chilled mixture into a highball or Collins glass filled halfway with fresh large ice cubes to remove pulp and seeds for a smooth texture.
- 3
Top with tonic and ginger beer
Carefully pour Navy Hill tonic over the strained cocktail (about 3 oz), then gently float or slowly add 2 oz ginger beer on top to create a layered effervescence. Add 2 dashes of Angostura bitters on the surface; they will create aromatic accents and subtle color.
- 4
Stir gently
Using a bar spoon, give the drink 2 slow turns to integrate the tonic, ginger beer, and cocktail base without losing too much carbonation.
Garnish & finish
- 5
Float half a fresh passion fruit (flesh side up) or a passion fruit wheel on top, place a thin lime wheel on the rim or on top, and add a mint sprig if using. Serve immediately with a straw and a small cocktail spoon for scooping passion fruit seeds if present.
