Chill glass and ingredients
Place a wine glass or large stemmed glass in the refrigerator or freezer for 10–15 minutes so it’s well chilled. Make sure all bottled ingredients are chilled before assembly.

If using simple syrup, have it measured and ready. Prepare orange slice and grapefruit twist for garnish.

Add soda and optional brightener
Float or gently pour 1 oz chilled club soda on top to lift aromatics. If you prefer a touch of sweetness, stir in 0.25 tsp simple syrup. If you want extra herbal bitters, add 1 dash of Angostura or a nonalcoholic bitter spray.

Stir gently
Using a bar spoon, give the drink one or two gentle turns (about 3–4 seconds) to integrate the aperitivo and vermouth with the sparkling wine without flattening the bubbles.
Garnish & Serve

Garnish the rim with the orange slice and rest the grapefruit twist on top or over the rim. Express the grapefruit twist over the drink (pinch it to release oils) then drop it in for aroma.

Serve immediately while effervescent. Recommend enjoying within 5–10 minutes for peak effervescence.
