    Beat eggs

    Crack the eggs into a small bowl. Add the milk and a pinch of salt and pepper. Whisk vigorously until mixture is uniform and slightly frothy (about 20–30 seconds).

    Heat pan

    Place a nonstick skillet over medium-low heat. Add the butter and let it melt, swirling to coat the pan. The butter should foam gently but not brown.

    Cook eggs

    Pour the whisked eggs into the warm pan. Let sit undisturbed for about 8–10 seconds until the edges begin to set. With a silicone spatula, gently push the cooked edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue this gentle folding and pushing every 10–15 seconds for 1.5–2 minutes, until the eggs are mostly set but still soft and slightly glossy. Remove from heat while slightly underdone — carryover heat will finish them.

    Finish and season

    If adding cheddar, sprinkle it over the eggs immediately after removing from heat and gently fold to melt. Taste and adjust seasoning with a tiny additional pinch of salt and pepper if needed.

    House potatoes (if chosen)

    Reheat previously cooked house potatoes in a skillet over medium heat with 1 tsp oil or butter for 3–5 minutes, stirring occasionally, until hot and slightly crisp. Transfer 1/2 cup to the plate alongside the eggs.

    Fresh fruit (if chosen)

    Spoon 1/2 cup fresh seasonal fruit (mixed berries, melon, or sliced fruit) into a small ramekin or onto the plate. No reheating required.

Garnish & serve

    Plate the scrambled eggs with the chosen side (house potatoes or fruit). Sprinkle the chopped chives over the eggs if using. Serve immediately while warm.
