Prep & Juice
Wash oranges thoroughly. Roll each orange under the palm to loosen juice. Cut in half crosswise. Using a commercial citrus press or high-quality hand juicer, press oranges until all juice is extracted. Strain juice through a fine mesh strainer into a clean pitcher to remove pulp and seeds if a smoother texture is desired.

Taste and adjust: if juice is too thick or sweet, add up to 1/2 cup cold filtered water and stir. If needed, sweeten with up to 1 tablespoon granulated sugar, stirring until dissolved.

Chill and hold: transfer juice to an insulated dispenser and chill to 38–45°F (3–7°C). Keep on ice or in refrigerated holding until service. Provide ice in serving cups as requested.
Pineapple Juice (Fresh)

Prep Pineapples
Trim top and bottom of each pineapple, stand upright and slice off the skin. Remove remaining eyes with a small knife and core the pineapple. Chop flesh into chunks suitable for blender or juicer.

Extract juice: in a high-speed blender, puree pineapple chunks in two batches with about 1/4 cup cold water per batch until smooth. Alternatively, run chunks through a cold-press juicer for a clearer juice.

Strain (optional): If a smoother, clearer juice is desired, strain pureed pineapple through a fine mesh sieve or cheesecloth, pressing to extract liquid. Stir in the juice of 1 lime to brighten flavor if desired.

Chill and hold: combine batches in an insulated dispenser, cool to 38–45°F (3–7°C), and keep refrigerated or on ice until service. Offer ice in cups on serving line.
Cranberry Juice (House Blend)

Combine 100% cranberry juice and apple juice in a large pitcher or dispenser. Taste and adjust: cranberry is tart — if too tart for your guests, add simple syrup a tablespoon at a time up to 1/4 cup, stirring and tasting between additions.

Chill and hold: refrigerate blend to 38–45°F (3–7°C) prior to service. Transfer to an insulated dispenser for the event and keep on ice. Provide ice with cups.

Juice Lemons
Roll lemons and cut in half. Using a citrus press, juice lemons into a large bowl, straining out seeds. You should yield roughly 3–4 cups lemon juice from 16 lemons (adjust quantity if yield varies).

Combine: In a large dispenser or container, combine strained lemon juice, cooled simple syrup, and the remaining 8 cups cold filtered water. Stir thoroughly and taste. If too strong, add additional water 1 cup at a time. If too tart, add more simple syrup in small increments.

Chill and hold: cool lemonade to 38–45°F (3–7°C) and keep refrigerated or on ice until service. Add lemon slices and mint sprigs to the dispenser or to individual cups as garnish. Provide ice in cups during service.

Estimate portions for a 3-hour event: plan roughly 12–16 oz (1.5–2 cups) per guest per hour for non-alcoholic beverage service; adjust based on package. Fill insulated dispensers with each juice and label clearly (Orange, Pineapple, Cranberry, Lemonade). Keep backup pitchers of each juice refrigerated for refilling.

Holding Temperatures & Food Safety: Keep all juices at 38–45°F (3–7°C). Replace dispensers or rotate product every 4–6 hours for freshness. Discard any juices left at room temperature for over 2 hours.

Service: Place dispensers on stable surface with cups, ice, and labels. Refill cups with ice as requested. Replenish garnishes (lemon slices, mint) and keep a small ladle or spigot clean and sanitized. Provide signage for any allergens (e.g., if juice blends contain apple).
