Fresh Fruit Salad

    Prepare strawberries

    Rinse strawberries under cold water, hull and quarter them so pieces are bite-sized (about 2 cups once prepared).

    Prepare blueberries

    Rinse blueberries and drain well; set aside (about 1 cup).

    Prepare pineapple

    Peel, core and dice fresh pineapple into roughly 1/2-inch pieces. Measure 1 cup.

    Prepare mango

    Peel and dice the mango into 1/2-inch cubes. Measure 1 cup.

    Prepare kiwi

    Peel and slice or dice kiwis into bite-sized pieces. Measure 1 cup.

    Prepare grapes

    Rinse seedless grapes, pat dry and halve them. Measure 1 cup.

    Combine all prepped fruit in a large mixing bowl and gently toss to mix, taking care not to mash softer fruit like strawberries and kiwi.

Citrus-Mint Dressing

    Make dressing

    In a small bowl whisk together 2 tbs fresh lime juice, 1 tbs honey (or agave), 2 tsp finely chopped fresh mint, 1 tsp orange zest, a pinch of sea salt and an optional pinch of finely ground black pepper until honey is dissolved and dressing is homogeneous.

    Taste the dressing and adjust: add up to 1 more teaspoon honey if you prefer sweeter, or a little more lime for brightness.

    Pour the dressing over the fruit mixture and gently toss with a large spoon or spatula until fruit is evenly coated.

To Finish (optional)

    Transfer the dressed fruit to a serving bowl or individual bowls. Sprinkle 2 tbs toasted chopped nuts or shredded coconut over the top for crunch.

    Garnish with 4 fresh mint sprigs. Serve immediately, or chill for up to 1 hour to let flavors meld. Consume within 24 hours for best texture.
