Prepare yogurt bases

Divide 4 cups of Greek yogurt into individual serving bowls or a large serving dish. Stir in the lemon zest and ground cinnamon evenly into the yogurt to brighten flavor.

Spoon the whole grain granola into a separate bowl or small serving containers so guests can add to taste. Toasted almonds go in a small bowl as a topping.

Arrange mixed berries in a bowl or scatter over yogurt just before serving to keep berries fresh. Provide honey on the side for drizzling (about 1 teaspoon per serving).

Assorted Pastry Platter

If pastries are refrigerated or chilled, bring them to room temperature. Warm croissants and pain au chocolat in a 325°F (165°C) oven for 5–7 minutes to refresh flakiness; danishes 4–6 minutes. Watch closely to avoid over-browning.

Arrange pastries attractively on a platter, grouping types together. Place small dishes of softened butter and assorted preserves alongside. Dust fruit danishes lightly with powdered sugar just before presenting.

Label preserves if offering multiple flavors and provide appropriate serving knives and tongs so guests can serve themselves hygienically.

Fresh Fruit Platter

Prepare fruit by cutting watermelon and melon into wedges or slices, dice pineapple into bite-size chunks, and halve grapes. Combine in a large shallow platter, keeping color contrast in mind (for example, place pineapple near berries or dark grapes).

Lightly toss fruit with 2 tablespoons fresh lime juice and 2 tablespoons honey (optional) to enhance sweetness and prevent browning on cut pieces. Chill for 10–15 minutes before serving.

House-made Quiche (2 quiches, 9-inch each)

Preheat and prepare crusts

Preheat oven to 375°F (190°C). Place the two 9-inch all-butter pie crusts on sheet pans lined with parchment. Crimp edges as desired. Blind-bake crusts: line each crust with parchment and fill with pie weights or dried beans and bake 12 minutes, remove weights and parchment, then bake 5 more minutes until the base is set but not browned. Reduce oven to 350°F (175°C) for baking filled quiches.

Prepare filling

In a skillet, heat 2 tablespoons olive oil over medium heat. Add caramelized onions (about 1.5 cups) to warm through and distribute evenly. If using mushrooms instead of bacon, sauté until any excess moisture is gone. If using bacon, ensure chopped cooked bacon is warmed slightly.

Whisk together 10 large eggs, 2 cups whole milk, 1 cup heavy cream, 2 teaspoons salt, and 1 teaspoon freshly ground black pepper in a large bowl until smooth and slightly frothy. Stir in 3 cups grated Gruyère, the warmed bacon (or mushroom) and caramelized onions, and half of the chopped chives. Mix to combine.

Divide the filling evenly between the two par-baked crusts. Gently tap each pan on the counter to release air bubbles and level the filling. Sprinkle remaining Gruyère or chives on top for a nice finish.

Bake quiches at 350°F (175°C) for 30–40 minutes, or until the custard is set around the edges and slightly wobbly in the center (internal temperature about 165°F / 74°C). If top browns too quickly, tent with foil.

Remove quiches from oven and cool on a rack for at least 15–20 minutes before slicing to allow custard to set fully. Garnish with remaining chopped chives. Serve warm or room temperature.
