Cocktail Base

    Combine spirits and citrus

    Measure 2 oz gin, 0.75 oz fresh lemon juice, 0.5 oz honey syrup, and 0.5 oz aperitif into a cocktail shaker.

    Add bitters and egg white

    Add 2 dashes orange bitters and, if using, 1/2 egg white to the shaker. The egg white is optional but will give a silky foam and body.

    Dry shake

    Without ice, firmly shake the contents for 12–15 seconds to emulsify the egg white and build a foamy head.

    Wet shake

    Add a large handful of ice (about 1 cup) to the shaker and shake vigorously for 12–18 seconds until well-chilled and the shaker becomes frosty.

Brightener & Aromatics

    Fine-strain the shaken cocktail through a fine-mesh strainer (or double strain through the shaker’s strainer and a fine strainer) into a chilled coupe or Nick & Nora glass to remove ice shards and any coagulated egg bits, leaving a smooth, glossy surface.

Garnish & Finish

    Express the oils of a lemon twist over the surface of the drink by holding the twist oil-side down about 2–3 inches above the cocktail and giving it a quick snap; then either drop the twist in as garnish or rest it on the rim.

    Optionally float an edible flower or a couple micro herb sprigs on the foam for visual appeal. Serve immediately.
