Slice and prepare loaves
Cut each loaf into service-friendly slices: sourdough into 1/2-inch slices, focaccia into 2-inch squares, and walnut raisin loaf into 3/4-inch slices. Arrange slices on a large board or basket lined with a clean linen.

Warm and finish loaves (optional)
Preheat oven to 350°F (175°C). Lightly brush both sides of the focaccia and sourdough slices with olive oil. Place slices in a single layer on baking sheets and warm in the oven for 6–8 minutes until just warmed through and slightly crisp at the edges. Remove and sprinkle a light pinch of flaky sea salt on the focaccia and sourdough. Walnut raisin slices can be warmed 4–5 minutes or served at room temperature.

Basic compound butter (herb-garlic)
In a medium bowl, combine 1/2 cup room-temperature unsalted butter, mashed roasted garlic cloves, 1 tablespoon finely chopped parsley, 1 tablespoon snipped chives, 1/4 teaspoon sea salt, and 1/8 teaspoon freshly ground black pepper. Mix with a spatula until uniform. Transfer to plastic wrap, form into a log, chill 30 minutes to firm, then slice into serving rounds.

Lemon-chive butter
Combine 1/4 cup room-temperature unsalted butter with 1 teaspoon lemon zest, 1 tablespoon chopped chives, and a pinch (about 1/8 tsp) of fine sea salt. Whisk until smooth, place in a small ramekin and chill briefly so it holds shape.

Smoky butter
Whip 1/4 cup room-temperature unsalted butter with 1/2 teaspoon smoked paprika and 1/8 teaspoon freshly ground black pepper until evenly colored. Place into a small dish for service.

Honey butter (sweet option)
If using prepared softened honey butter, place 1/2 cup in a small bowl and whisk briefly with 1/2 tablespoon of extra virgin olive oil to loosen and add a glossy finish. Garnish with a few toasted seeds or a light sprinkle of flaky sea salt, if desired.

Garnish and final touches
Drizzle 1 tablespoon extra virgin olive oil lightly over the focaccia pieces if desired. Scatter microgreens and toasted seeds around the butter dishes and bread for color and texture. Provide small butter knives or spreaders for each butter dish.
