Potato Wedges

Prepare the Potatoes
Wash and scrub the russet potatoes thoroughly. Cut each potato into wedges (about 8 wedges per potato).

Soak the Wedges
Place the potato wedges in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and will result in crispier fries.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the potato wedges and pat them dry with paper towels. Fry the potato wedges in batches for about 4-6 minutes or until golden brown and crispy. Remove them from the oil and drain on paper towels.

Season the Wedges
While the wedges are still hot, sprinkle them with Tajin seasoning, garlic powder, and salt. Toss to coat evenly.
Lime Crema

Mix the Ingredients
In a small bowl, combine the sour cream, lime juice, lime zest, and a pinch of salt. Whisk until smooth.

Chill
Cover the lime crema and refrigerate for at least 15 minutes to allow the flavors to meld.
Sweet-Chili-Chipotle Dipping Sauce

Combine the Sauces
In a bowl, mix together the sweet chili sauce, chipotle powder, and garlic powder until well combined.

Transfer the dipping sauce to a small serving bowl.
