Method
Taco Proteins
Season & Cook Ground Beef
Heat a large skillet over medium-high heat. Add 1 tablespoon neutral oil. When shimmering, add the ground beef, breaking it up with a spatula. Cook 6–8 minutes until browned and no pink remains. Drain excess fat if necessary, then stir in 2 tablespoons taco seasoning and 1/2 cup water. Reduce heat to medium-low and simmer 3–4 minutes until sauce is slightly thickened. Keep warm and cover.
Prepare Chicken Thighs
Trim excess fat from chicken thighs and pat dry. Toss thighs in 2 tablespoons taco seasoning and the remaining 1 tablespoon oil. Heat a second large skillet or grill pan over medium-high heat. Add chicken and cook 5–7 minutes per side, or until internal temperature reaches 165°F (74°C). Remove and let rest 5 minutes, then chop into bite-size pieces or slice thinly. If preferred, shred with forks. Keep warm and cover.
Tortillas & Shells
Warm tortillas in batches: stack corn or flour tortillas and wrap in a clean kitchen towel, steam in a 350°F (175°C) oven for 8–10 minutes or heat on a dry skillet 20–30 seconds per side. Keep wrapped in towel to retain heat. Crisp taco shells according to package instructions (usually bake 5–8 minutes at 375°F) and transfer to a serving holder so shells stay upright.
Salsas & Hot Sauces
Place pico de gallo, salsa verde, chipotle crema, and hot sauce into small serving bowls. Stir chipotle crema before filling the bowl. Label bowls so guests can choose. Keep salsas chilled until service; remove about 10 minutes before serving so flavors open.
Fresh Toppings
Arrange shredded iceberg, shredded red cabbage, diced tomatoes, diced red onion, chopped cilantro, and lime wedges in separate shallow bowls or hotel pans. Keep limes whole-wedge style. Replenish frequently to maintain freshness and crispness.
Cheese & Dairy
Place shredded cheddar, crumbled cotija, and sour cream into serving bowls. For sour cream, transfer to a squeeze bottle or small ladle for easy portioning. Stir cheeses lightly before service to remove clumps.
Pickled & Extras
Place pickled jalapeños, pickled red onions, and radish slices in small bowls. Provide tongs or spoons. Keep chilled until service.
Sides & Garnishes
Keep Mexican rice and refried beans warm in hotel pans over steam or in warming trays. Provide a spoon or scoop for guests. Place lime crema in a squeeze bottle for easy drizzling.
Assembly & Service
Set up the taco bar with warm tortillas and shells at the start. Offer protein pans (ground beef and chopped/shredded chicken) with serving spoons. Arrange toppings, salsas, cheeses, pickles, and sides in logical order (tortilla → protein → cheese/veg → salsas → extras → lime). Place utensils, napkins, plates and small bowls for rice/beans nearby. Provide labels for allergens and indicate spicy items. Restock proteins and cold items as needed during service.
Suggested portioning per guest: 3–4 tortillas or 2 crunchy shells, 4–6 oz protein, 1 cup combined toppings/sides. This recipe (given quantities) should serve approximately 24 guests with one protein choice; adjust quantities proportionally for larger events.
