Make the sauce

In a small bowl combine 1/2 cup mayonnaise, 3 tablespoons ketchup, 1 teaspoon yellow mustard, 2 tablespoons sweet pickle relish, 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic powder, 1/2 teaspoon Worcestershire sauce, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until smooth and refrigerate while you cook the patties to let flavors meld.

Prep produce and buns

Slice the tomato into 1/4-inch thick rounds (about 4 slices), thinly slice the red onion into rings, wash and dry 4 lettuce leaves, and set aside 4 pickle slices per burger. Split the brioche buns and lightly butter the cut sides with 1 tablespoon butter per two buns (optional).

Toast buns

Heat a skillet or griddle over medium heat. Place buttered bun cut-sides down and toast until golden and crisp, about 1-2 minutes. Remove and keep warm.

Cook patties

Heat 2 tablespoons neutral oil in the same skillet over medium-high heat until shimmering. Place the 2 Impossible patties in the skillet, leaving space between them. Cook for 3-4 minutes without moving to get a good sear. Flip and cook 2-3 more minutes until well browned and heated through (internal temperature not required for plant-based, but patties should be hot). During the last 60 seconds of cooking, place one American cheese slice on each patty and cover the skillet with a lid or tent with foil to help the cheese melt.

Assemble burgers

Spread about 1 1/2 tablespoons of camp sauce on the bottom half of each toasted bun. Place a lettuce leaf on the sauce, add the cheesy Impossible patty, top with 3-4 tomato slices, 4 pickle slices, and a few red onion rings. Spread a thin layer (about 1 teaspoon) of camp sauce on the top bun and place it on the burger.

Serve

Serve the burgers immediately while hot. Offer extra camp sauce on the side. Enjoy with fries or a simple salad.

If cooking on a grill, preheat to medium-high and cook patties 3-4 minutes per side; add cheese at the end and close the lid to melt. Adjust salt and pepper in the sauce to taste. All ingredients correspond to the items listed in the ingredient sections.
