Prepare bread and spread

Lightly toast all 6 slices of bread until golden but still slightly soft inside (about 2–3 minutes per side on a griddle or 4–5 minutes in a toaster). While warm, spread softened butter on one side of each slice. On three of the slices, on the unbuttered side, spread a thin layer of mayonnaise (about 1 tbs each). On the remaining three slices, spread remaining mayonnaise mixed with dijon mustard (mix 1 tbs mustard into the remaining mayonnaise), dividing evenly.

Assemble first layer (base)

Place one mayo-only slice mayo-side up on your work surface. Top with a layer of turkey (about 100 g), two bacon slices, one cheese slice (if using), and a leaf or two of lettuce. Season the tomato slices lightly with 1/2 tsp salt and 1/4 tsp black pepper and set aside for the next layer.

Middle layer

Place a mayo+mustard slice mayo-side down on top of the first layer to create the middle. On top of that bread (buttered side up), add the ham (about 100 g), 2 more bacon slices, tomato slices (arrange evenly), another cheese slice, and more lettuce as desired.

Top layer and finish

Cap the sandwich with the final mayo-only slice mayo-side down (buttered side out). Press gently but firmly to compact the layers. Using a sharp knife, trim off crusts if desired, then cut the stacked sandwich diagonally into quarters (or halves) to make classic club triangles. Insert a wooden skewer or toothpick through each quarter to hold layers together.

Seasoning and serve

Taste a corner; if needed, sprinkle remaining 1/4 tsp black pepper over exposed tomato. Serve each sandwich quarter with pickles and potato chips on the side. If transporting for a camp or picnic, wrap each quarter tightly in parchment and keep chilled until serving.

Optional extras

If you prefer crispier bacon, cook bacon in a cast-iron pan or over a camp stove until very crisp, drain on paper towel, and allow to cool before assembling. For a grilled finish, butter the outside of the assembled sandwich and grill whole sandwiches on a hot skillet for 2–3 minutes per side until golden and cheese slightly melted.
