Burger Patties

Mix

In a large bowl combine the ground beef, grated onion, Worcestershire sauce, garlic powder, salt and black pepper. Gently fold the mixture with your hands or a spatula until just combined—do not overwork to avoid tough patties.

Shape

Divide the mixture into four equal portions (about 4 oz / 113 g each). Gently form each portion into a patty roughly 3/4 inch thick and slightly larger than your buns. Press a shallow dimple in the center of each patty with your thumb to reduce bulging while cooking.

Rest

Place formed patties on a tray, cover loosely with plastic wrap, and refrigerate for 15–30 minutes if time allows. This helps them hold together while cooking.

Sauce

While patties rest (or ahead of time), whisk together mayonnaise, ketchup, Dijon mustard, pickle relish, hot sauce (if using), salt, and pepper in a small bowl. Taste and adjust seasoning. Refrigerate until ready to use.

Slice buns if not pre-sliced. Lightly butter the cut sides of each bun. Toast buttered sides in a skillet over medium heat or on a grill for 1–2 minutes until golden and slightly crisp. Prepare lettuce, tomato slices, onion slices and pickles and set aside.

Cook Patties

Heat a large skillet or griddle over medium-high heat and add the neutral oil, swirling to coat. When the pan is hot and shimmering, add the patties, leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms.

Flip the patties and cook for another 3 minutes for medium doneness. Place a slice of cheddar on each patty in the last 30–60 seconds of cooking and cover the pan with a lid to melt the cheese.

Remove patties to a plate and let rest for 2 minutes. Internal temperature should be 160°F (71°C) for well done; adjust times if you prefer different doneness.

Assemble & Serve

Spread a generous spoonful of the sauce on the bottom half of each toasted bun. Place a lettuce leaf on the sauce, then the cheeseburger patty, followed by tomato slices, onion, and pickles. Spread sauce on the top bun and close the burger.

Serve immediately with fries or a side salad.
