Eggs

Polenta

Ciabatta Toast

Method

Eggs

  1. 1

    Prepare the Eggs

In a skillet, heat 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook until your desired doneness (sunny side up, over easy, or scrambled). Season with salt and pepper to taste. Remove from heat and set aside.

Polenta

  1. 2

    Cook the Polenta

In a large saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt and gradually whisk in 1 cup of cornmeal. Reduce the heat to low and cook, stirring often, until thickened (about 15-20 minutes). Stir in 2 tablespoons of butter and 1/2 cup of Parmesan cheese. Mix well and set aside.

Sausage

  1. 3

    Make the Sausage

In a mixing bowl, combine 1 lb of ground pork with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of fennel seeds, 1 teaspoon of garlic powder, and 1 teaspoon of paprika. Mix until well combined. Shape the mixture into patties.

  2. 4

    Cook the Sausage

In a skillet over medium heat, cook the sausage patties for about 4-5 minutes on each side, or until fully cooked and browned. Remove from skillet and set aside.

Ciabatta Toast

  1. 5

    Toast the Ciabatta

Spread 1 tablespoon of butter on both sides of the ciabatta slices. Toast them in a skillet or on a grill until golden brown and crispy.
