Knead the Dough
Transfer the dough to a floured surface and knead it for about 10 minutes until smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
Divide the rested dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until thin. Cut the rolled-out dough into tagliatelle strips (approximately 1/4 inch wide). Dust with flour to prevent sticking.
Bolognese Sauce Preparation

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until softened. Add minced garlic and sauté for another minute until fragrant.

Brown the Meat
Add the ground beef and pork to the skillet. Cook, breaking it apart with a spoon, until browned, about 8-10 minutes. Drain excess fat if necessary.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer uncovered for at least 30 minutes, stirring occasionally. If the sauce becomes too thick, add a splash of water or broth.

Cook the Tagliatelle
In a large pot of salted boiling water, cook the tagliatelle for about 2-3 minutes or until al dente. Drain and reserve a cup of pasta water.

Combine with Sauce
Add the cooked tagliatelle to the bolognese sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

Serve
Serve the tagliatelle bolognese in bowls, garnished with additional fresh basil and grated Parmesan cheese if desired.
