Pasta Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, beat the eggs gently, gradually incorporating the flour until a shaggy dough forms.

    Knead the Dough

    Transfer the dough onto a lightly floured surface. Knead the dough for about 10 minutes until it is smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll the Pasta

    After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin. Cut the sheets into wide strips to form tagliatelle.

Bolognese Sauce Preparation

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Brown the Meat

    Add the ground beef and ground pork to the skillet. Cook, breaking the meat apart with a spoon, until browned and cooked through, about 8-10 minutes.

    Add Garlic and Tomatoes

    Stir in the minced garlic and cook for 1 minute until fragrant. Then add the crushed tomatoes, tomato paste, and red wine.

    Season the Sauce

    Add oregano, basil, salt, and black pepper to the sauce. Bring to a simmer, then reduce heat to low and let it cook for at least 30 minutes, stirring occasionally.

Combining and Serving

    Cook the Tagliatelle

    Bring a large pot of salted water to a boil. Add the tagliatelle and cook for 3-4 minutes until al dente. Drain the pasta.

    Combine with Sauce

    Toss the cooked tagliatelle with the bolognese sauce until well coated.

    Serve

    Plate the tagliatelle bolognese and garnish with grated Parmesan cheese and fresh basil if desired.
