Prep the Steak

    Season the Ribeye Steak

    Take the ribeye steaks and pat them dry with paper towels. Rub each steak with olive oil, then season generously with garlic powder, salt, and black pepper on both sides. Let the steaks sit at room temperature for about 30 minutes.

    Prepare the Rosemary

    Chop the fresh rosemary finely and set aside for later use.

Prep the Potatoes

    Boil the Potatoes

    Wash the russet potatoes thoroughly and place them in a large pot. Cover with cold water and add a teaspoon of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Once boiled, drain the potatoes and return them to the pot. Add butter, minced garlic, salt, and black pepper. Mash the potatoes until smooth and creamy. Stir in the chopped chives.

Cook the Steak

    Sear the Steak

    Preheat a cast-iron skillet over medium-high heat. Once hot, add the seasoned steaks to the skillet. Sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Add Rosemary

    During the last minute of cooking, sprinkle the chopped rosemary over the steaks to infuse flavor. Remove the steaks from the skillet and let them rest for 5 minutes.

    Plate the Dish

    On each plate, serve a generous portion of the creamy mashed potatoes alongside the ribeye steak. Drizzle any remaining juices from the skillet over the steak for added flavor.
