Preparing the Artichokes

Clean the Artichokes
Begin by trimming the stems of the artichokes and removing the tough outer leaves. Cut off the top 1/3 of the artichoke to expose the tender inner leaves.

Boil the Artichokes
Bring a large pot of salted water to a boil. Add the cleaned artichokes and boil for about 10-15 minutes until they are just tender. Remove from water and let them cool.

Prepare for Frying
Once cooled, slice the artichokes in half lengthwise. Remove the fuzzy choke from the center using a spoon.

Prepare the Coating
In a shallow dish, combine flour, salt, and black pepper. Mix well to ensure even seasoning.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Fry the Artichokes
Dredge each artichoke half in the flour mixture, shaking off any excess. Carefully place them in the hot oil, cut side down. Fry for about 3-4 minutes until golden brown, then flip and fry for an additional 2-3 minutes.

Drain Excess Oil
Once fried, transfer the artichokes to a plate lined with paper towels to absorb excess oil.

Mix the Ingredients
In a bowl, combine mayonnaise, minced garlic, lemon juice, lemon zest, and salt. Mix until smooth and well combined.

Taste and Adjust
Taste the aioli and adjust seasoning with additional salt or lemon juice as desired.
Serving

Plate the Dish
Serve the fried artichokes hot with the lemon aioli on the side for dipping.
