Prepare the Ribeye
Remove the ribeye steak from the refrigerator and let it sit at room temperature for about 30 minutes. This helps it cook evenly.

Boil the Potatoes
In a pot of salted water, add the baby potatoes and bring to a boil. Cook for about 10-15 minutes until fork-tender. Drain and let them cool slightly.

Crisp the Potatoes
Preheat the oven to 425°F (220°C). Cut the boiled potatoes in half and toss them with olive oil, garlic powder, salt, and black pepper. Spread them out on a baking sheet and roast for 20-25 minutes until crispy and golden.
Salsa Verde

Prepare the Salsa Verde
In a food processor, combine fresh parsley, cilantro, garlic clove, lemon juice, and salt. Pulse until finely chopped.

Add Olive Oil
With the food processor running, slowly drizzle in the olive oil until the mixture is smooth. Adjust seasoning if needed.

Cook the mushrooms for about 5-7 minutes until they are golden brown and crispy.

Wash the arugula thoroughly under cold water and pat dry. Set aside.
