Roasted Rosemary Fingerling Potatoes

Method

Pork Chop Preparation

  1. 1

    Season the Pork Chop

Rub the 14 oz bone-in pork chop with salt and black pepper, ensuring it is evenly coated.

  2. 2

    Heat the Grill

Preheat your grill to medium-high heat.

  3. 3

    Grill the Pork Chop

Place the seasoned pork chop on the grill and cook for about 6-7 minutes on each side until the internal temperature reaches 145°F (63°C).

  4. 4

    Prepare the Marsala Sauce

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  5. 5

    Add Marsala Wine

Pour in 1 cup of Marsala wine and bring to a simmer. Let it reduce for about 5 minutes.

  6. 6

    Finish the Sauce

Stir in 2 tablespoons of butter until melted and smooth. Add chopped parsley before serving.

Preheat your oven to 425°F (220°C).

  2. 8

    Prepare the Potatoes

Wash and halve the fingerling potatoes lengthwise.

  3. 9

    Season the Potatoes

In a bowl, toss the halved fingerling potatoes with 2 tablespoons of olive oil, 1 tablespoon of chopped rosemary, 1 teaspoon of salt, and 0.5 teaspoon of black pepper until well coated.

  4. 10

    Roast the Potatoes

Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender, flipping halfway through.
