Prepare the Broccoli Rabe
Trim the ends of the broccoli rabe and cut it into 2-inch pieces. Blanch in boiling salted water for 2-3 minutes until tender, then drain and set aside.

Cook the Orecchiette
In a large pot of salted boiling water, cook the orecchiette according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Cook the Sausage
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the fennel sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.

Sauté the Garlic and Vegetables
Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Then, add the blanched broccoli rabe and cherry tomatoes. Cook for an additional 3-4 minutes until the tomatoes begin to soften.

Combine Pasta and Sauce
Add the drained orecchiette to the skillet, along with the reserved pasta water. Toss everything together to combine. If the dish seems dry, add more pasta water as needed.

Finish with Cheese and Seasoning
Remove from heat, stir in the grated parmesan cheese, and season with salt and black pepper to taste. Drizzle with the remaining tablespoon of olive oil before serving.
