Grilled Bread

Method

Preparing the Mussels

  1. 1

    Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove any beards (the fibrous threads) by pulling them off.

  2. 2

    Sauté Aromatics

In a large pot over medium heat, add a splash of olive oil. Sauté minced garlic and chopped shallots until they are translucent, about 3-4 minutes.

  3. 3

    Add Wine and Mussels

Pour in the white wine, increase the heat to high, and bring to a boil. Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened.

  4. 4

    Prepare the Cream Sauce

Once the mussels are cooked, reduce the heat to medium-low. Add the heavy cream, chopped parsley, chopped thyme, salt, and black pepper to the pot. Stir gently to combine and let it simmer for 2-3 minutes.

Grilling the Bread

  1. 5

    Slice the Baguette

Cut the baguette into 1-inch thick slices.

  2. 6

    Brush with Olive Oil

Brush both sides of the baguette slices with olive oil.

  3. 7

    Grill the Bread

Preheat a grill or grill pan over medium heat. Grill the bread slices for 2-3 minutes on each side, until they are golden brown and crispy.

  4. 8

    Rub with Garlic

Remove the grilled bread from the grill and immediately rub one side with the halved garlic clove for a light garlic flavor.
