Preparation of Seafood

Prepare the Seafood
Rinse the white fish fillets, shrimp, and calamari under cold water. Pat them dry with paper towels.

Slice Green Onions
Slice the green onions into thin strips and set aside.

Prepare Lemon Wedges
Cut the lemons into wedges and set aside for serving.
Batter Preparation

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Gradually whisk in the cold sparkling water until you achieve a smooth batter.
Lemon Aioli Preparation

Prepare the Lemon Aioli
In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and black pepper until well combined. Adjust seasoning to taste.
Frying

Fry the Seafood
Dredge each piece of seafood in the batter, allowing excess to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per batch.

Fry the Green Onions
Once the seafood is cooked, quickly fry the sliced green onions in the same oil for about 1-2 minutes until crispy. Remove and drain on paper towels.

Drain and Serve
Remove the fried seafood and green onions from the oil and place them on paper towels to drain excess oil. Serve hot with lemon wedges and the lemon aioli.
