Preparing the Panini

    Slice the Ingredients

    Thinly slice the fresh mozzarella cheese and fresh tomatoes. Set aside.

    Assemble the Panini

    On one slice of ciabatta bread, spread 2 tablespoons of garlic aioli. Layer with fresh mozzarella slices, followed by tomato slices, and a generous handful of fresh basil leaves. Top with another slice of ciabatta bread.

    Grill the Panini

    Preheat a panini press or skillet over medium heat. If using a skillet, you can use a heavy pan to press down on the sandwich. Grill the panini for about 4-5 minutes, or until the bread is golden brown and the cheese has melted.

Preparing the Side Potatoes

    Boil the Potatoes

    In a large pot, add baby potatoes and cover them with water. Bring to a boil and cook for about 10-12 minutes, or until just tender. Drain and let cool slightly.

    In a mixing bowl, combine the boiled potatoes with olive oil, garlic powder, salt, black pepper, and fresh rosemary. Toss until the potatoes are well coated.

    Preheat your oven to 400°F (200°C). Spread the seasoned potatoes on a baking sheet in a single layer. Roast for 20-25 minutes, or until crispy and golden brown.
