Method

Preparing the Pasta

  1. 1

    Cook the Cappellini

Bring a large pot of salted water to a boil. Add the cappellini pasta and cook according to package instructions, typically around 3-4 minutes, until al dente. Drain and set aside.

Making the Pomodoro Sauce

  1. 2

    Sauté the Garlic

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

  2. 3

    Add Tomatoes

Pour in the canned whole tomatoes, including their juice, and break them up with a spoon. Stir to combine.

  3. 4

    Season the Sauce

Add salt, black pepper, and sugar to the sauce. Stir to incorporate the seasonings and let the sauce simmer on low heat for about 15-20 minutes, stirring occasionally.

  4. 5

    Add Fresh Basil

Towards the end of the cooking time, add the fresh basil leaves and stir them into the sauce. Cook for an additional 2-3 minutes.

Combining and Serving

  1. 6

    Combine Pasta and Sauce

Add the cooked cappellini to the skillet with the pomodoro sauce. Toss gently to coat the pasta evenly with the sauce.

  2. 7

    Serve

Divide the pasta among serving plates, then sprinkle with grated Parmesan cheese and garnish with fresh basil leaves. Serve immediately.
